FRY DAY

These cookies are quite possibly my favorite of the week. I've always loved snickerdoodles, but these are really good and the maple adds this rich flavor that's usually not there.

Maple Snickerdoodles

2 c. flour

1 1/2 tsp cinnamon

3 Tbsp maple syrup

1/4 c. maple sugar (I used brown sugar)

1 1/2 tsp baking powder

1/4 tsp baking soda

1/2 c. margarine, soft

1 egg

1 c. sugar

1/2 c. sugar


Stir flour, powder, soda and cinnamon together. In a large bowl, cream the margarine and 1 cup of sugar until fluffy. Beat in egg and maple syrup. Gradually blend the dry ingredients. (Here's where I refridgerated the dough overnight, a process I now swear by - as well as using parchment paper....it's just amazing.) Roll dough into small balls, then in a bowl with the maple or brown sugar and the 1/2 cup of sugar (you don't need that much, more like 1/4 cup). Bake 6-8 minutes.


My apartmentmate is sick, so she can't come rushing out of her room dramatically smelling the air and loudly saying "MMMMMMM!". It's a little disheartening, but today when I gave her a snickerdoodle fresh from the oven she said, "oh man, I wish I had my sense of smell back so I could smell these cookies!". So if that doesn't make you want to run and make some, I don't know what will.
